How to Make Homemade Eggplant Parmesan

Eggplant parmesan is a classic Italian meal that is not only delicious but also easy to prepare. Perfect for dinner parties, family gatherings, or any other occasion you can think of, this vegetarian-friendly meal can be enjoyed by almost anyone. By following this easy recipe, you can make homemade eggplant parmesan from the comfort of your own apartment.

This recipe takes about an hour to prepare and serves approximately six people.

Ingredients:
  • ½ cup seasoned bread crumbs
  • ¼ cup grated parmesan cheese
  • 1 eggplant – trimmed, peeled, and thinly sliced
  • 1/2 cup olive oil
  • 1 can tomato paste (6 ounces)
  • 6 ounces water
  • ¼ tsp dried basil, parsley, and oregano
  • 1 clove garlic – crushed
  • Salt and pepper to taste
  • 8 ounces fresh mozzarella cheese - grated
Directions:
  • Preheat oven to 425° F and grease an 8x14-inch baking dish.
  • Mix the bread crumbs and parmesan cheese in a bowl.
  • Brush olive oil on the slices of eggplant and press them into the bread crumb mixture until they’re coated, then lay the eggplant in the baking dish and place it in the oven for 15 minutes.
  • Whisk the tomato paste and water in a saucepan and bring it to a simmer on the stove, then stir in the basil, parsley, oregano, garlic, salt, and pepper.
  • Take the eggplant out of the oven and spoon the sauce on top of it, then top it with the mozzarella cheese.
  • Bake for 15 more minutes, then take it out and enjoy.
